Healthy slow cooker meals are hearty and enjoyable and easy to prepare. Balanced meals are simple and satiate the appetite at the same time. One positive aspect about a slow cooker is that thousands of recipes are adaptable to accommodate this cooking style.

Beer Beef Brisket – Diabetes Friendly

  • 1 4-pound beef brisket
  • 1 chopped medium onion
  • 1 clove of minced garlic
  • 1 bay leaf
  • 1 12-ounce bottle of beer
  • ¼ cup of chili sauce
  • ½ teaspoon of dried thyme
  • ¼ teaspoon of black pepper
  • 2 tablespoons of cold water
  • 2 tablespoons of cornstarch

Prepare the brisket by trimming away the fat then cut the brisket so it fits into the slow cooker. Add the onions and bay leaf to the slow cooker. In a separate bowl, mix beer, thyme, salt , pepper, garlic and chili sauce, then pour it over the meat. Cook the brisket for 10 to 12 hours on low heat, or 5 to 6 hours on high heat. Once the brisket is finished, transfer the meat onto a separate plate and cover it with tinfoil so it remains hot. Pour the brisket juice into a bowl and skim any excess fat. Add cornstarch and water to 2 ½ cups of the juice and cook it until the juice becomes a thick gravy. This recipe makes 10 servings. This recipe is wonderful served with freshly baked rolls.


Guinness Chicken

  • 6 tablespoons of flour
  • 2 ½ pounds of cubed chicken
  • 1 can or bottle of Guinness
  • 8 ounces of chopped mushrooms
  • 1 pound of chopped carrots
  • 1 teaspoon of salt
  • ½ teaspoon of pepper
  • 2 cups of diced onions
  • 1 cup of low-sodium chicken broth
  • 2 cups of peas
  • 4 cloves of garlic
  • 1 teaspoon of dried thyme
  • 1 bay leaf

Coat the chicken in a mixture of flour, salt and pepper. Heat the olive oil and cook the chicken until it browns, then transfer the chicken to the slow cooker. Add the Guinness to the pan where the chicken was cooked and mix together the beer and the juices from the meat, then pour over the chicken. Add the mushrooms, onions, carrots, garlic, thyme and bay leaf. Cook for 4 hours on high heat or 7 to 8 hours on low heat. When the chicken is done, add the peas and heat. Cornstarch may be added to add thickness to the sauce.


Hearty Vegan Vegetable Soup

  • 9 cups of water
  • 3 cups of chopped carrots
  • ¾ cups of diced celery
  • ¾ cups of diced mushrooms
  • 2 ½ teaspoons of garlic powder
  • ½ cup of mustard
  • 1 cup of cooked chickpeas
  • ½ teaspoon of salt
  • 1 vegetable bouillon cube
  • 1 teaspoon of pepper
  • 3 cups of diced turnips
  • 3 cups of freshly chopped spinach

Combine all of the ingredients besides the spinach into the slow cooker and cook for 6 hours or until the vegetables are nice and tender. Once the soup is complete, add the spinach and allow it to cook down for several minutes.
